Camping breakfast

PB&J Oatmeal:

Whether you’re headed out for an all-day adventure or just craving a tasty and filling breakfast, oatmeal is a great choice.  We also know you don’t have the entire pantry at your disposal when camping, so we have the perfect, just-sweet enough backcountry breakfast recipe: PB&J Oatmeal.

It’s simple, requires very few ingredients, and will keep you full until lunch!

Ingredients (portions vary based on group size and hunger levels):

  • Quick-cooking oats
  • Water
  • Split Peanut Butter & Jelly packet
  • Optional: banana or fresh berries

Heat up water in a pot over a camping stove or fire. Once boiling, pour over quick-cooking oats and let them cook for about a minute or until the water has absorbed. Add a Split peanut butter & jelly packet over the top for flavor and protein. If you are car camping or have access to fresh produce, top off the oats with sliced banana or some fresh berries. Enjoy!

Slightly Fancy Instant Ramen:

Ramen is always a fan favorite and easy to pack in the car or in your backpack when camping. Why not spend a few extra minutes to boost the flavor and add in some vegetables? You can substitute these vegetables for others you have around the house, but here’s one of our favorite flavor combinations.

Ingredients (we suggest following the ramen packet servings for the group size):

  • Instant ramen packet(s)
  • Red onion
  • Mushrooms (any type will work, but we suggest shiitake if you can find)
  • Water
  • Olive oil or other cooking oil (only need a little)
  • Optional: Sriracha, green onions for topping

Slice your red onion into thin strips. Heat a pot with a little oil over a camping stove or fire. Add about ¾ of the onion to the pot and sauté until onion starts becoming soft and caramelized. Add in mushrooms and sauté a little longer. Add in water (according to ramen packet), ramen seasoning and ramen noodles. Cook according to the package and until the noodles are soft. Remove from heat and serve. Top each bowl with the remaining sliced onion, sliced green onion and hot sauce if you like heat. Enjoy!
